Wind speed also depends on averaging period
A three-second gust, a ten-minute mean and an hourly mean describe the same wind with very different numbers. Convert the unit here, but keep the averaging period from the source, because codes specify both.
Speed converts, pressure squares
Wind pressure scales with the square of velocity. A ten percent error in a converted wind speed becomes roughly twenty-one percent in the resulting pressure, so it is worth carrying full precision until the final rounding.
